Salt encrusted rooster gluten-free –
One of my friends has prepared this recipe for us one evening at dinner. It’s an easy recipe and makes the meat very tasty and really good.
Salt encrusted rooster gluten-free
Preparation time 1 hour and a half
Ingredients for 2 persons:
1 rooster of about 600 grams
20 grams of bacon
rosemary
laurel
sage
black pepper
3 egg whites
1 kg of salt
1 kg of coarse salt

Take a rooster and put in his belly the spices, black pepper and a bit of bacon. Make two cuts in the chest and put in two pieces of bacon.
Put it on a baking sheet covered with parchment paper.

Meanwhile, beat the egg whites with the salt, then add the coarse salt and mix well (the dough will be very hard). Cover tightly the rooster with the mixture.

Bake at 200°C for 60 minutes.
Remove the crust, it will become very hard and will crumble into large pieces (when broken, the pieces will come off easily from the meat).

With this recipe, you can make also some potatoes. They have to be cooked whole and in their skins, but I have to say that, with this type of cooking, the potatoes became a little salty, while the meat is perfect.
