Gluten-free yogurt tiramisu –
The gluten-free yogurt tiramisu is a lighter version of the traditional tiramisu with mascarpone cheese: of course, the taste isn’t the same and it feels slightly the acidity of the yogurt, but it’s very good.
Gluten-free yogurt tiramisu
Preparation time 30 minutes (excluded rest in the refrigerator)
Ingredients for 8 persons:
200 grams of gluten-free ladyfingers
3 eggs
100 grams of sugar
250 grams of greek yogurt
2 tablespoons of honey
2 small cups of coffee
half glass of milk
cocoa powder

Separate the yolks from the whites. Beat the egg yolks with 50 grams of sugar and whip the egg whites until stiff with the remaining 50 grams.

Mix yogurt with honey and incorporate the yolks, whip again. Finally add gently the egg whites.

Mix the coffee with milk and a teaspoon of sugar and soak the ladyfingers.
Place the biscuits on the bottom of 8 cups (or a single pan), cover with yogurt cream and sprinkle with cocoa.

Chill for at least 2 hours before serving.
