Gluten-free truffle chocolate cake –
When I don’t have much time or desire to prepare something complicated, this cake is a life-saver, is a cross between a cake and a chocolate truffle; with a little ice-cream, it’s also perfect to serve to your guests.
Preparation time 45 minutes
200 grams of dark chocolate,
125 grams of butter
200 grams of white sugar
Melt chocolate in double boiler and melt the butter over low heat.
Divide the yolks from the whites and mix the sugar with 4 egg yolks.
Whip the egg whites with a pinch of salt.
Once melted, add the chocolate to the yolks. Do the same with the melted butter.
Once blended it all, slowly add the egg whites.
Pour into a cake pan (round or square) and bake at 180°C for about 25 minutes.
When it’s cooked, it forms a crust on top that breaks: it contributes to the goodness of the cake when you eating it, but if you don’t like it aesthetically, you can flip the cake, or cover it with icing sugar.
Another idea to serve: warm it in the oven for 4-5 minutes and accompany it with vanilla ice-cream.
