In this recipe of gluten-free stewed potatoes, I put only black pepper, but you can flavor with lots of spices such as paprika, oregano, rosemary, curry, chili etc., according to your tastes. I make them every time with different spices 🙂
Gluten-free stewed potatoes
Preparation time 45 minutes
Ingredients for 2 people:
4 medium potatoes
1 small red onion
4 tablespoons of extra virgin olive oil
3 tablespoons of tomato sauce
Brown the onion in olive oil and then remove it (if you like to taste more of the onion flavor you can leave it).
Peel, wash and cut into large pieces the potatoes, pour into the pan with the oil, then cook for a few minutes, stirring with a spoon.
Then add the tomato sauce, salt, and water (up to the half height of the potatoes).
Cover the pan with a lid and cook over low heat for about 30-40 minutes; when they are almost cooked add the pepper and rollback the sauce. The potatoes are cooked when, putting in them a fork, they are soft.
