These gluten-free soft lemon cookies have a slight aftertaste of lemon and are perfect with tea.
Gluten-free soft lemon cookies
Preparation time 30 minutes
Ingredients for 20 cookies:
100 grams of gluten-free flour (I used the BiAglut flour)
125 grams of sugar
4 egg yolks
a pinch of salt
zest of one lemon
Beat the egg yolks with the sugar, add the grated rind of lemon, salt and sifted gluten-free flour. Mix well. The dough stays soft.
On a baking sheet, covered with baking paper, divide the dough into dollops well spaced and bake at 180°C for 10 minutes.
