Gluten-free small apple cakes –
A little biscuit and a little cupcake, with a sweet apple filling.
Preparation time 30 minutes (excluding the preparation of the shortcrust pastry)
Ingredients for 12 small cakes:
1 tablespoon of sugar
1 tablespoon of lemon juice
Grease and flour the molds.
Roll out the gluten-free shortcrust pastry (recipe here) and cut circles to put in the molds.
Meanwhile, cut the apples into small pieces and mix them with the sugar and lemon.
Put a tablespoon of apples in each cake.
Close the cakes with discs of pastry: you can decorate them, making stars and hearts (or other shapes) with a pastry cutter, putting them on the disks and pushing them for adhering well.
Bake at 180°C for about 15 minutes.
