Gluten-free shortcrust cookies decoration –
If you like shaping, today I propose an easy and pretty decoration for gluten-free shortcrust cookies.
Make a classic gluten-free shortcrust pastry (recipe: gluten-free shortcrust pastry) and let it stand in the refrigerator for one hour.
Roll out the dough and cut some discs with a glass: half the discs are the basis of the cookies, that you can spread with the filling of your choice (jam, melted chocolate, Nutella, custard, etc.).
On the other half of the discs, make a hole with a pastry cutter shaped like a flower.
I modeled the leaves with a little bit of pastry and a toothpick, then I added a second, smaller flower made with simple balls of dough, crushed with a toothpick.
Then put the decorated part on the base and press the edges to adhere well.
Let stand the cookies for 10 minutes in the refrigerator.
Bake at 180°C for 10-12 minutes.
