Gluten-free Sacher Torte –
The original recipe for Sacher Torte is, as we all know, a secret. This recipe that I propose to you is the Sacher that my aunt prepared when I was a child and it’s really good.
Gluten-free Sacher Torte
Preparation time 1 hour
Ingredients:
150 grams of dark chocolate
150 grams of butter
6 eggs
130 grams of sugar
70 grams of gluten-free flour (I used the BiAglut flour)
100 grams of finely chopped almonds
1 pinch of salt
For the topping:
apricot jam
200 grams of dark chocolate
half glass of double cream

Melt the butter and work it with the sugar. Combine the egg yolks one at a time and mix.
Melt the chocolate in double boiler and add to the mixture. Then add the chopped almonds and flour.

Finally, beat the egg whites until stiff with a pinch of salt and add them to the mixture. Bake at 180°C for 30 minutes.

Let cool the cake. Put a layer of jam over the cake and cover with the previously melted chocolate, mixed with the double cream.
