Gluten-free pie with white chocolate cream and strawberries –
A gluten-free pie easy to make with strawberries and white chocolate, two flavors that blend perfectly.
Preparation time 1 hour (excluding rest in refrigerator for 4 hours)
400 grams of strawberries
230 grams of double cream
100 grams of milk
3 egg yolks
35 grams of sugar
200 grams of white chocolate
Boil together cream and milk. Meanwhile, beat the egg yolks with the sugar.
Put a little hot liquid on the beaten egg yolks, mixing well, and then put them in the saucepan with the rest: stirring constantly, cook until almost boiling.
Chop the white chocolate and add it to the cream, stirring well until it’s smooth and creamy.
Grease and flour the mold; I used a mold which directly creates the tart with space for cream.
Roll out the gluten-free shortcrust pastry into the mold.
Bake at 180 ° C for about 15-20 minutes.
Fill the space in the center with white chocolate cream and put in the fridge to rest for 1 hour.
Cover the entire surface of the cake with strawberries cut in half and put back in the refrigerator for at least 2 hours before serving.
