Gluten-free penne with sauce at 3 flavors –
I tasted a sauce with these ingredients in a restaurant in Florence and it’s a combination of very pleasant flavors.
Preparation time 30 minutes
Ingredients for 4 people:
350 grams of gluten-free penne pasta
8 ripe tomatoes
3 tablespoons of tomato sauce
½ red onion
100 grams of mortadella in a high slice
30 grams of pine nuts
extra virgin olive oil
2 basil leaves
Sauté the onions cut into slices.
Clean the tomatoes depriving them of the peel and seeds and cutting into cubes. Put them in the pan with the onion and saute over high heat for 1 to 2 minutes. Add the sauce, salt, chili and lower the heat, cover with a lid and cook for 10-15 minutes.
Add the zucchini (washed, cleaned and cut into small cubes) and cook for another 10 minutes.
When almost cooked add the mortadella made into cubes, pine nuts, 2 fresh basil leaves and cook another 2 minutes.
Cook the gluten-free pasta in plenty of salted water and dress with the sauce.
