Gluten-free orange cookies –
These cookies are delicious, friable and melt in your mouth.
Preparation time 35 minutes (excluded rest in the refrigerator)
Ingredients for 35 biscuits (quite large):
540 grams of gluten-free flour (I used the BiAglut flour)
200 grams of butter
275 grams of vanilla sugar (*)
4 whole eggs + 1 egg yolk
juice of one orange
8 grams of baking powder
(*) store the white sugar in a jar containing a vanilla bean
Put the gluten-free flour sifted with the baking powder in a bowl. Melt the butter and put it at the center of the flour, add all other ingredients except one egg and 30 grams of sugar.
Quickly work the dough and when it’s well mixed, wrap it in a towel and place in refrigerator for an hour.
Then roll the dough to a thickness of about a half centimeter. Obtain the cookies of the desired shape and, after aligning them on a baking pan, brush them with egg and sprinkle with sugar.
Bake at 180°C for about 10 minutes.
If stored in a tightly closed container, they remain good and friable for several days.
