Fast to make and really good. They are usually topped with Nutella, I made them half with Nutella and half with a hazelnut: good both versions 🙂
Gluten-free Nutella cookies
Preparation time 50 minutes
Ingredients for 16 cookies:
180 grams of Nutella
160 grams of gluten-free flour (I used the BiAglut flour)
1 egg
8 teaspoons of Nutella and 8 hazelnuts.
Mix well the Nutella with the egg and then add the gluten-free flour, a little at a time, stirring until the mixture is smooth and homogeneous.
Wrap in plastic wrap and allow to rest 30 minutes in the refrigerator. Shape into balls and place on a baking tray lined with baking paper.
Put a whole hazelnut on half of the cookies and on the other half make a cavity in the center with your finger.
Bake at 180°C for 10 minutes.
When the cookies are cool, put a half teaspoon of Nutella over each cookie with the cavity. If you like you can also add a bit of chopped hazelnuts above the Nutella.
