Gluten-free mounted apple cupcakes by Montersino –
The original recipe is of Chef Luca Montersino, I have made it gluten-free and I made some small changes to my taste. These cupcakes are really good and fluffy.
Preparation time 1 hour
Ingredients for 18 cupcakes:
250 g of gluten-free flour
8 g of baking powder
250 g of butter at room temperature
200 g of vanilla flavored sugar (*)
15 g of Rum
1 tablespoon of lemon juice
1 pinch of salt
(*) store the white sugar in a jar containing a vanilla bean
Cut the apple into cubes and pour over the lemon juice.
Mount the butter with the sugar, add egg yolks and mount again. Add the rum and stir.
Add gluten-free flour sifted with baking powder and mix well. Beat the whites until stiff and gently add them to the mixture.
Pour the mixture into the molds until the middle height, place over some apple cubes and sprinkle with a little sugar.
Bake in a preheated oven at 180°C for about 15 minutes.
