Gluten-free mixed vegetables in a pan
Preparation time 40 minutes
Ingredients for 2 people:
3 carrots
3 zucchini
1 yellow pepper
extra virgin olive oil
vegetable broth
salt
pepper
Clean all vegetables and make them into pieces, keeping them separate from each other.
Heat 2 tablespoons of olive oil and place the peppers, cook them for a little over high heat; lower the heat and cover with the stock.
Cover and simmer for 10 minutes, then add the carrots and cook, if necessary adding a little broth, for another 10 minutes. Finally, add the zucchini and cook together for another 5 minutes (don’t overcook them).
Towards the end of cooking add salt and pepper and turn up the heat to withdraw the broth; serve hot.
