Chicken and turkey stewed meatballs enriched by “small cubes” of onions and carrots.
Gluten-free meatballs stewed with carrots and onions
Preparation time 1 hour
Ingredients for 3 persons:
200 grams of minced chicken meat
200 grams of minced turkey meat
2 slices of prosciutto (ham)
1 egg
100-150 grams of gluten-free breadcrumbs
5 carrots
a white onion
paprika
rosemary
oregano
turmeric
3 tablespoons of tomato sauce
chicken broth
extra virgin olive oil
salt
Make the meatballs by mixing the meat with spices, egg, ham (cut into small pieces), 80-100 grams of gluten-free breadcrumbs (with the breadcrumbs I go to the eye, depending on the humidity of the other ingredients) and a pinch of salt.
Shape into balls and roll in breadcrumbs.
Heat oil in a pan and brown well the meatballs, add the carrots and onions, cut into cubes, and fry again for 2 minutes.
Add the sauce, salt and cover with hot broth.
Cook with a lid on low heat for about 30-40 minutes.
