English lemon biscuits, obviously perfect with tea 🙂
Gluten-free lemon meltaways biscuits
Preparation time 30 minutes (excluded rest in the refrigerator)
Ingredients for 30 biscuits:
160 g of butter
80 g of icing sugar
45 g of vanilla icing sugar
the grated rind of two lemons
2 tablespoons of lemon juice
280 g of gluten-free flour (I use BiAglut flour)
1 teaspoon of baking powder
1 pinch of salt
icing sugar to decorate

Let the butter soften at room temperature and work it with the icing sugar.
Add the zest, lemon juice, salt, and mix. Add the sifted flour with baking powder and work fast.

Make a sausage of about 5 cm in diameter, wrap in parchment paper and leave it in the refrigerator for at least 12 hours.

Preheat oven to 180°C, cut the cold dough in thick slices of about 1 cm, place them on a baking sheet covered with parchment paper and bake for 10-12 minutes.

Once cooked, take them out of the oven and wait 4-5 minutes, then dip them in the icing sugar while still hot and let cool completely on a rack.
