Gluten-free lemon cookies –
Quick and delicious cookies flavored with lemon.
Preparation time 1 hour.
Ingredients for about 28 cookies:
100 g of sugar
100 g of melted butter
300 g of gluten-free flour (I used the BiAglut flour)
½ packet of yeast
juice of 1 lemon
Place in a bowl the egg, sugar, cold melted butter and the lemon juice, mix and then add slowly the flour sifted with baking powder and mix until it forms a smooth dough.
Shape into balls and roll in icing sugar.
Bake at 180°C for 15-18 minutes.
