Gluten-free Krumiri cookies –
The Krumiri (or Crumiri) are typical cookies of Casale Monferrato (Italy), created in 1878 by pastry chef Domenico Rossi; the recipe is secret and protected by patent. This is only one possible recipe derived from the reading of the ingredients, however, have come quite similar to the original, both as the consistency that flavor.
Gluten-free Krumiri cookies
Preparation time 30 minutes (excluded rest in the refrigerator for 2 hours)
Ingredients for 15-20 biscuits:
350 grams of gluten free flour (I used the BiAglut flour)
200 grams of butter
140 grams of vanilla sugar (*)
2 egg yolks
(*) store the white sugar in a jar containing a vanilla bean
Mix all the ingredients until it forms a firm dough.
Put a little dough at a time into a pastry bag without snout and form a stick. Fold them in half, forming the “boomerang” shape and scratch the surface with a fork in the direction of length.
Arrange the cookies on the pan and then put it in the refrigerator for 2 hours.
Bake at 190°C for 10 minutes.
