Gluten-free Green Risotto –¬†

A light risotto, with a delicate flavor.

Green Risotto

Preparation time 30 minutes

Ingredients for 2 people:

170 grams of rice

100 grams of boiled spinaches

100 grams of boiled beets

30 grams of butter

40 grams of scratched parmesan cheese

half small onion

0,5 l of vegetal broth



Brown the onion in 20 grams of butter, add the vegetables and cook for one minute. Chop finely until it became creamy.


Put the rice into the pan and toast it a minute. Add the cream of vegetables and cover with the broth and cook for about 20 minutes, adding more broth if necessary.


When cooked, add salt and put out the fire. Add the Parmesan cheese and the remaining butter and cover. After 2-3 minutes, mix well and serve.
