Gluten-free glazed hazelnuts diamond shapes – 

Brown sugar and hazelnuts give life to a crisp sweet, something between a cake and cookies.

Preparation time 45 minutes

Ingredients:

250 grams of gluten-free flour (I used the BiAglut flour)

8 grams of baking powder

150 grams of brown sugar

2 eggs

half glass of milk

75 grams of butter

75 grams of chopped hazelnuts

1 pinch of salt

For the icing:

150 grams of icing sugar

1 tablespoon of lemon juice

2 tablespoons of water

Sift the gluten-free flour with baking powder and a pinch of salt. Add sugar and chopped nuts, stir well. Beat with a hand whisk the eggs and add them to the flour.

Add the melted butter, milk and mix well.

Place in a baking square pan covered with baking paper and bake at 180°C for 25 minutes (after 15 minutes cover the cake with a sheet of aluminum foil). Let cool the cake.

Meanwhile, make the glaze. Dissolve the sifted icing sugar with lemon juice and water, adding any sugar and/or water if needed to get a thick cream, otherwise it slides off the cake.

Spread all over the cake and allow to set. Cut into diamond shapes.
