Gluten-free cookies with sugar crystals –
These gluten-free cookies with sugar crystals are very friable and with a delicate flavor, perfect with a glass of cold milk.
Preparation time 45 minutes (excluded rest in the refrigerator of 1 hour)
Ingredients for 60 cookies:
500 grams of gluten-free flour (I used the BiAglut flour)
250 grams of butter
half a glass of milk
120 grams of vanilla sugar (*)
4-5 tablespoons of brown sugar
a pinch of salt
half teaspoon of baking powder
(*) store the white sugar in a jar containing a vanilla bean
Cut the butter into thin slices, add sugar, salt, baking powder, milk and gluten-free flour.
Knead until the dough is smooth and soft. Let stand in refrigerator for an hour.
Divide the dough in small sticks and mash them in the brown sugar.
Bake at 200°C for 10 minutes.
