Gluten-free coffee mousse –
I love all sweets with coffee and this mousse is really good 🙂
Gluten-free coffee mousse
Preparation time 30 minutes (excluded rest in the refrigerator)
Ingredients for 4 people:
3 egg yolks
1 small cup of coffee
80 grams of sugar
6 grams of gelatin sheets
200 ml of whipping cream
2 tablespoons of sugar for the cream
Soften the gelatin in cold water.
Beat the egg yolks with the sugar.
Add coffee to the whipped yolks and put them on heat and cook for about 5 minutes until it veils the spoon. Turn off the heat and add the squeezed gelatine, stirring well until it’s completely dissolved; let cool.
Meanwhile whip the cream with 2 tablespoons of sugar, then mixing from bottom to top, embed it to the egg.
Place the mousse in coffee cups and raise the edges around putting aluminum that sticks out 1 cm from the edge and fill it with mousse.
Chill for at least 4 hours before serving.
