Gluten-free coffee beans cookies –
Biscuits with a delicate taste of coffee, perfect with a cappuccino or a glass of milk.
Gluten-free coffee beans cookies
Preparation time 30 minutes (excluded the rest in the refrigerator)
Ingredients for 18 cookies:
125 grams of vanilla sugar (*)
100 grams of butter
2 egg yolks
250 grams of gluten-free flour (I used the BiAglut flour)
8 grams of baking powder
a pinch of salt
a teaspoon of instant coffee
a small cup of coffee
(*) store the white sugar in a jar containing a vanilla bean

Cut the cold butter into slices and mix with the sugar.

Combine the egg yolks one at a time, then coffee, soluble coffee and a pinch of salt, stir and then add the sifted flour with the baking powder. Knead and let the dough rest in the refrigerator for 1 hour.
Shape into balls and make a small incision in the middle.

Arrange them on a pan covered with baking paper, spaced apart, and bake at 160°C for about 10 minutes.
