Gluten-free Ciambellone with white chocolate –
This “ciambellone” (big donut) is fluffy and with a very delicate taste.
Preparation time 1 hour
150 g of vanilla white sugar (*)
100 g of white chocolate
200 g gluten-free flour (I used the BiAglut flour)
100 g of butter
8 g of baking powder
a pinch of salt
(*) store the white sugar in a jar containing a vanilla bean
Melt the butter over low heat, turn off the stove and put the white chocolate to bits.
Meanwhile beat the egg yolks with 100g sugar, then add the salt, the melted chocolate with the butter and whisk again. Whisk the egg whites until stiff with the remaining sugar.
Add the flour sieved with the yeast, finally gently incorporate the egg whites. Pour the dough in the baking-pan.
Bake in oven at 180°C for 30 minutes.
When it’s cold, dust with icing sugar.
