Make the gluten-free shortcrust pastry (without adding baking powder to the dough) and let it rest in the refrigerator for an hour. Roll out the dough and cut out the cookies with decreasing size molds. Additionally, make little stars with a bit higher thickness.
Bake at 180°C for 10 minutes. Let the cookies cool completely.
Make the frosting: put in a bowl the icing sugar and the food coloring (to make the green I used 3 drops of yellow and 3 of blue) and add plain water, a teaspoon at a time, stirring well, until it reaches the consistency desired.
Put the sugar icing on the first cookie, the largest, and with a toothpick make some lines on the edges to simulate the leaves. Then put on top the next cookie and repeat until the smallest.
Make a little more liquid white sugar icing, pass the star in it and then cover it with the colored sugar. Let dry a few minutes.
Place a drop of green frosting on top of the tree and placing above the star.
Place here and there some sugar balls, making them adhere with colored glaze drops.
I made green trees with silver beads and white ones with colored disks.
