Gluten-free chocolate matchsticks –
Shortbread cookies, decorated with sugar and chocolate, very good and nice to see.
The idea of matchsticks decoration isn’t mine, it’s a little anywhere on the web 🙂
Gluten-free chocolate matchsticks
Preparation time 50 minutes (excluded rest in the refrigerator)
Ingredients for 60 matchsticks:
300 grams of gluten-free flour (I used the BiAglut flour)
8 grams of baking powder
120 grams of vanilla sugar (*)
1 tsp of icing sugar
1 egg
1 egg yolk
1 egg white
200 grams of butter
100 grams of dark chocolate
1 pinch of salt
(*) store the white sugar in a jar containing a vanilla bean


Sift the gluten-free flour with baking powder and put in the center the whole egg, the egg yolk, salt, butter (cut into thin slices) and 90 grams of sugar.
Knead forming a ball and place it in the refrigerator to rest for 30 minutes.
Roll out the dough to a height of 5 mm and cut it into strips about 2 cm wide and 8 cm long.
Lightly beat the egg white with a teaspoon of icing sugar, brush all the sticks and sprinkle with the remaining sugar.

Bake at 160°C for 10-12 minutes.

When they are cold, dip the tip into the melted chocolate and allow to solidify before serving.
