Gluten-free chocolate bars with almond and cherry jam
Preparation time 1 hour
Ingredients for 15-18 bars:
1st layer:
200 grams of gluten-free flour (I used the BiAglut flour)
20 grams of cocoa powder
125 grams of butter
1 egg yolk
100 grams of sugar
2nd layer:
5-6 tablespoons of cherry jam
150 grams of dark chocolate coarsely chopped
200 grams of finely chopped almonds
4 egg whites
100 grams of sugar
50 grams of vanilla flavored sugar (*)
40 grams of flaked almonds
1 pinch of salt
(*) store the white sugar in a jar containing a vanilla bean
Cream the butter with the sugar, then add the egg yolk and mix. Add the sifted flour with the cocoa and mix.
Roll out the dough on the base of a square pan and prick with a fork.
Bake at 170°C g for 10 minutes.
Meanwhile, beat the egg whites with a pinch of salt, add sugar gradually and continue beating. Finally, add the ground almonds and mix gently.
Remove the pan from the oven, spread a layer of jam, then the chopped chocolate and finally the mixture of egg whites.
Cover everything with flaked almonds.
Bake at 180°C for about 25 minutes.
