Gluten-free chicken thigh rolls –
The dish with chicken, simple and very tasty.
Gluten-free chicken thigh rolls
Preparation time 1 hour
Ingredients for 2 persons:
4 chicken thigh
4 slices of speck (Italian smoked ham) or bacon
1 sprig of rosemary
4 sage leaves
a little onion or shallot
a glass of broth
salt
extra virgin olive oil

Remove the skin to the thigh, remove with a sharp knife the central bone and any fat.
Wash and dry the sage and rosemary and make a mince. Sprinkle the inside of the meat with the chopped and a pinch of salt
Close the rolls, with around a slice of speck (or bacon), with kitchen twine.

In a saucepan heat the oil and let cook the onion over low heat. Place the rolls to brown over high heat for 3 minutes.
Lower the heat and add a cup of hot broth; cook for 30 minutes until they are browned.

We’ve eaten them with baked potatoes with a mixture of dried spices (oregano, basil, chives and chili).
