Gluten-free chicken breast rolls – 

A tasty dish, healthy and quick to make.

Gluten-free chicken breast rolls

Preparation time 30 minutes

Ingredients for 2 people:

4 chicken breast slices

2 slices of “speck” smoked ham (or bacon)

3 leaves of sage

a sprig of rosemary

40 grams of spicy provolone cheese

meat broth

2 tablespoons of extra virgin olive oil

salt

pepper

Chop the smoked ham (or bacon) with sage and rosemary.

Spread the chicken breast slices and sprinkle with the chopped; put on each slice a piece of cheese. If the chicken breast slices are too big cut them in half lengthwise. Close each roll with string.

Heat the oil in a pan and parboil the rolls on both sides. Add half a cup of broth, cover and cook over low heat for about 15 minutes. Once the broth is almost used up, add salt and pepper, turn up the heat and brown well the rolls.
