Gluten-free chiacchiere with double cream – 

“Le Chiacchiere” (chats) are a typical treat of carnival in Italy. This recipe is easy with just a few ingredients and you can fry or bake them.

I used the gluten-free flour “Revolution” and it’s really good, very flexible, easy to work and with a good flavor.

Gluten-free Chiacchiere with double cream

Preparation time 30 minutes

Ingredients for about 25-30 “Chiacchiere”:

200 g of gluten-free flour (I used the Revolution flour)

125 ml of double cream

grated zest of 1 lemon or 1 orange

2 tablespoons of sugar flavored with vanilla

1 tablespoon of rum

a pinch of salt

icing sugar to decorate

seed oil for frying

(*) store the white sugar in a jar containing a vanilla bean

Put together flour, cream, sugar, rum, lemon zest, salt and knead.

Roll out the dough very thin and cut into rectangles with a serrated wheel, then cut each rectangle in the middle.

Fry in abundant seed oil, a few at a time, for 3-4 minutes (they are ready when are golden on both sides); just cooked transfer them to a plate covered with absorbent paper.

Sprinkle with icing sugar when they are cold.

You can also bake them at 180°C for 20 minutes.
