Gluten-free Brutti ma buoni (Ugly but good) –
“Brutti ma buoni” (Ugly but good) or “bruttiboni” (ugly good) are sweets of almonds typical of Prato (a city in Tuscany, near Florence), simple to make and very good. I have also added the hazelnuts.
Gluten-free Brutti ma buoni (Ugly but good)
Preparation time 35 minutes
Ingredients for 20 large cookies:
4 egg whites
100 grams of sugar flavored with vanilla
70 grams of almonds
70 grams of hazelnuts
a pinch of salt
(*) store the white sugar in a jar containing a vanilla bean
Toast the almonds and hazelnuts in the oven and chop coarsely.
Beat egg whites with a pinch of salt, then add the sugar a little at a time by mounting well. Gently add the chopped nuts.
Divide the dough into dollops on a baking sheet covered with baking paper.
Bake at 160°C for about 20 minutes.
Remove from the pan when they are completely cold.
