Gluten-free baked zucchini –
A dish that can be made in advance, put to rest in the refrigerator and then heat for a few minutes in the oven (or microwave) before eating.
Preparation time 45 minutes
Ingredients for 2 people:
1 tablespoon of extra virgin olive oil
5 tablespoons of tomato sauce
grated Parmesan cheese
50 grams of spicy provolone cheese
2-3 tablespoons of vegetable broth
salt and pepper
Wash and clean the zucchini and cut them into pieces.
Heat the oil and place the zucchini making them fry over high heat for 1 minute.
Lower the heat and add the vegetable broth. Cook for about 10 minutes (the zucchini must remain compact), toward the end of cooking, add salt and pepper.
Remove from heat and mix with tomato sauce and parmesan.
In a small baking tin put a little of tomato sauce on the bottom, then a layer of zucchini, mozzarella and provolone slices.
Then do another layer of zucchini, ending with mozzarella and parmesan.
Cook in the oven at 180°C for 30 minutes.
