Gluten-free artichokes with bacon –
From November to April you can find these delicious vegetables, rich in iron and minerals. Today I propose a simple and tasty recipe to prepare them.
Gluten-free artichokes with bacon
Preparation time 40 minutes
Ingredients for 2 persons:
8 artichokes
a cup of vegetable broth
20 grams of smoked bacon cut into thin slices
2 tablespoons of extra virgin olive oil
salt
Arrange a bowl of cold water with some ice in it. The cold water will serve as not to darken the artichokes once cut. Use gloves to clean the artichokes otherwise you’ll stain your hands.
Clean the artichokes by removing the stem and the outer leaves (until mid-artichoke or at least until you get to the softer yellow leaves). Cut 2/3 of the artichoke tips, then cut into 4 and wipe the inside (remove all fine hairs). Finally cut the cleaned pieces into slices and put them into the icy water.
Put in a pan 2 tablespoons of olive oil, saute for 2 minutes the artichokes, add the broth and a bit of salt. Cover and cook on low heat for 20 minutes.
Cut into small pieces the bacon slices and add them to the artichokes, raise the heat and cook for another 5 minutes, until browning well the bacon.
