Gluten-free almond pastries, soft and with a delicate flavor.
Gluten-free almond pastries
Preparation time 30 minutes (excluded rest in the refrigerator)
Ingredients for 35 pastries:
300 grams of ground almonds or almond flour
180 grams of vanilla sugar (*)
3 egg whites
candied cherries Gluten-free almond pastries
a pinch of salt
(*) store the white sugar in a jar containing a vanilla bean
Beat the egg whites with a pinch of salt and add sugar gradually, continuing to mount. Combine the ground almonds and mix.
Put the mixture in the fridge for 1 hour.
With a pastry bag make the pastries and decorate them with candied cherries, pine nuts, and flaked almonds.
Bake at 180°C for 15 minutes.
Dust with icing sugar the ones without the candied cherry.
