Gluten-free almond cookies


Gluten-free almond cookies – 

Here is a recipe to use the egg whites that advance from other preparations, with a really good result! After tried them, you’ll make them and look for recipes for using the yolks 🙂

Gluten-free almond cookies

Preparation time 30 minutes

Ingredients for 20-25 biscuits:

220 grams of finely chopped almonds

300 grams of icing sugar

6 tablespoons of gluten-free flour (I used the BiAglut flour)

5 egg whites

1 teaspoon of vanilla extract

candied cherries


Mix the almonds, chopped finely, with sifted gluten-free flour and sugar.

Add egg whites, beaten with a pinch of salt, and mix well; let stand for 5 minutes. Stir vigorously all, adding vanilla.


Arrange on a baking pan (covered with baking paper) dollops of mixture, putting on each one a half candied cherry.


Bake at 180°C for 10-12 minutes.
