Gingerbread men gluten-free –
The gingerbread men are classic Christmas cookies, which this year I enjoyed making them in a gluten-free version.

Gingerbread men gluten-free
Preparation time 1 hour (excluding resting in the fridge of 1 hour)
Ingredients:
250 g of gluten-free flour (I used BiAglut flour)
50 g of cocoa
2 teaspoons of ginger
1 teaspoon of cinnamon
125 g of butter
75 g of white sugar
75 g of cane sugar
1 egg and 1 yolk
2 tablespoons of honey
1 teaspoon of baking soda
1 pinch of salt

gluten-free food colors
gluten-free heart-shaped and balls sugars

Cut the cold butter into thin slices and work it with the white sugar, cane sugar and a pinch of salt.

Add the egg, yolk, and honey and mix.

In another bowl sift the flour with the cocoa, spices and baking soda.

Combine everything and knead to form a smooth and homogeneous dough. Wrap it in a sheet of film and put it to rest in the refrigerator for 1 hour.

Put the dough between two sheets of baking paper and roll out the dough at a height of about 1 cm.

Cut the dough with a cookie cutter in the shape of a little man.

I left half of the men as they are and folded the arms to the other half, putting in the middle a little-rolled baking paper to create a space underneath.

Bake in a ventilated oven at 180°C for 10 minutes. Leave the biscuits to cool on a grill.
Made a glaze with icing sugar and a little water

Remove the baking paper in the arms of the little men, put a little icing and place a candy.

Decorate the men with the white and/or colored icing with gluten-free food colors. You can also add sugar hearts and balls instead of buttons, stopping them on the cookie with a drop of icing.

Let the icing solidify and your gingerbread men gluten-free are ready!
