Beef fillet with gluten-free asparagus cream –
In this preparation, the meat is tasty and tender. The addition of asparagus cream completes the dish to perfection.
Beef fillet with gluten-free asparagus cream
Preparation time 1 hour
Ingredients for 4 people:
900 grams of beef fillet
500 grams of asparagus
60 grams of prosciutto
25 grams of butter
1 glass of stock
2 dl of milk
1 teaspoon of gluten-free flour
a few leaves of sage
1 sprig of rosemary
salt and pepper
Chop rosemary and sage and mix it with salt and pepper
Make some cuts in the piece of meat and put a little mixture in each hole. Wrap the meat with the ham slices and tie with string.
Fry in a pan with 10 grams of butter. When it begins to brown, sprinkle with the broth and let it evaporate.
Meanwhile clean the asparagus by scraping well with a knife the outside and deprive of the tougher basis, wash them carefully, cut into small pieces and add to the meat.
Moisten with milk (up to half of the meat) and cook for 40 minutes over low heat.
When cooked, remove the thread and ham, and cut the meat into slices (keep them in a warm place).
Chop the ham with asparagus, forming a cream (there will still be the milk left over from cooking). Meanwhile, melt the remaining 15 grams of butter and add the gluten-free flour.
Put in the saucepan the cream of asparagus and ham with butter and flour and cook, over medium heat, for 2 minutes.
Put the hot cream over the slices of meat.
